Nesting Cupcakes

Who doesn’t like a gourmet cupcake, or any cupcake for that matter! These sweet indulgences will complement any seasonal gathering, dinner party or holiday luncheon. For starters, make a batch of cupcakes (your choice), using your favorite family recipe or packaged variety. Cool and let rest. Whip up the following basic cream cheese icing fixings below, along with other essentials.

Ingredients

  • 1/2 cup butter, softened
  • 8 ounces cream cheese
  • 4 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 1 pkg. shaved coconut
  • 1 bag of Speckled Robin Eggs or other egg-shaped chocolates

Directions
Toast a desired amount of coconut on a baking pan, on bake or broil until lightly brown. Remove to cool. Beat softened butter and cream cheese until well blended. Add powdered sugar and vanilla. Beat until creamy. Now you’re ready to top the cupcakes with a generous swirl of icing, applied with either a decorating form and tip, or simply with a knife. Add a few pinches of toasted coconut to simulate a nest, then perch speckled candy eggs on top. Add family and friends, and enjoy!
